Capital Tacos Steps Up to the (Dinner) Plate

The Tex-Mex eatery in Land O' Lakes is attracting a loyal following.

What makes Capital Tacos stand out from the competition?

That’s easy, says chef Bobby Heskett, who owns the shop with wife, Kristel.

“We got every other Mexican restaurant beat in that we have the freshest food, the freshest ingredients,” he said while slicing raw chicken in the kitchen of the Land O’ Lakes eatery. “We have not one bit of MSG in this place. Everything you eat is all natural flavor. It’s the way things are supposed to taste.”

This commitment to freshness and flavor has seemed to earn the new business a loyal following.

“I highly recommend the catawampus (burrito, taco, any way you'd like). So glad to see a new restaurant in LOL. We need more places to eat!” Julia Castro wrote on Patch.

Added Denice McClure, “I own Florida Power Yoga and right after we are done with class, the first words are usually, ‘Who’s up for Capital Taco."’

Capital’s dishes —  make that “flavor combos” — can be served up on tacos, burritos, in bowls and on top of salads. One of the most popular items is the Austinite, which includes carne asada, jack and cheddar cheese, caramelized onions, avocado, sour cream, chihuahuha cheese and chipotle ranch salsa.

There are also breakfast items, a taco of the month, sodas with cane sugar and craft beers.

“A lot of the people like the fajitas,” Kristel added. “It has a bit of an Asian flair to it. People love our fried chicken also.”

The couple is no stranger to the restaurant industry. They spent a number of years with Bobby’s family’s business, Pancho’s Villa in San Antonio, which has since traded hands. Capital Tacos was seven years in the making, Kristel said.

“We were putting our ideas together, one bit at a time, making our own recipes,” Kristel said. “We make everything from scratch. We believe in pure stuff and freshness.”

Business is doing well despite not having an advertising push.

“People are already coming from Wesley Chapel, the South Tampa area,” Kristel said. “It’s just slowly getting out of there by word of mouth.”
